Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until a smooth dough forms, about 2-3 minutes.
  • Fold in the white chocolate chips.
  • Scoop the dough onto a cookie sheet lined with parchment paper, leaving space between each cookie.

Baking

  • Bake for about 10-12 minutes, until the edges are set but the middle is still soft.
  • Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
  • If cookies puff up, gently press them down with a spatula.

Notes

For storage, keep cookies in an airtight container for 4-5 days. Dough can be chilled ahead of time for up to 48 hours to deepen flavors. If dough is too sticky, chill for 30 minutes before scooping.
