Ingredients
  

For the Salmon

  • 4 fillets salmon fillets The star of the show!
  • 2 tablespoons olive oil For searing
  • salt and pepper to taste For seasoning

For the Mango Salsa

  • 1 ripe mango, diced Sweet and tangy!
  • 1/2 red onion, finely chopped Adds sweetness and crunch
  • 1 red bell pepper, diced For a fresh crunch
  • 1 jalapeño, seeded and minced Adds spice (optional)
  • 1 tablespoon lime juice Freshly squeezed for zing
  • cilantro, chopped (optional) Fresh garnish

Instructions
 

Preparation

  • Preheat a skillet over medium heat and add 2 tablespoons of olive oil.
  • Season salmon fillets with salt and pepper.

Cooking the Salmon

  • Carefully place the salmon in the hot skillet and sear for 4-5 minutes on each side until golden brown.

Making the Mango Salsa

  • In a bowl, mix together the diced mango, chopped red onion, red bell pepper, minced jalapeño, lime juice, and optional cilantro.
  • Adjust seasoning to taste and mix well.

Serving

  • Serve the seared salmon topped with a generous scoop of mango salsa.

Notes

Mango salsa can be prepared ahead of time and stored in the fridge for 2-3 days. Leftover salmon can be reheated or turned into a salad.
