  • 2 cups cherry tomatoes Fresh and vibrant
  • 1 head garlic Use the whole head
  • 8 ounces spaghetti Feel free to use any pasta you prefer
  • 2 tablespoons olive oil Healthful and adds flavor
  • to taste salt For seasoning
  • to taste pepper For seasoning
  • as desired fresh basil leaves For garnish and flavor
  • as desired Parmesan cheese Optional, for topping

Preparation

  • Preheat your oven to 400°F (200°C).
  • Spread the cherry tomatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper.
  • Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.

Cooking

  • Roast the tomatoes and garlic in the oven for about 20-25 minutes.
  • While waiting, boil water and cook the pasta until al dente.
  • Once the garlic and tomatoes are done roasting, squeeze the garlic into a bowl and mash it.
  • Toss the cooked pasta with roasted tomatoes, mashed garlic, and fresh basil.
  • Serve warm and add Parmesan cheese if desired.

Notes

Store leftover pasta and sauce separately in the fridge for up to 3-4 days to prevent mushiness. To reheat, add a splash of water or more olive oil.
