  • 1 cup Roasted red peppers Jarred or homemade.
  • 3 cloves Garlic, minced Sauté until fragrant.
  • 1 cup Chicken broth Can substitute with vegetable broth.
  • 2 tablespoons Olive oil For sautéing.
  • to taste Salt
  • to taste Pepper
  • for serving Rice or crusty bread Serves to soak up the sauce.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Sauté minced garlic until fragrant.
  • Add roasted red peppers and chicken broth.
  • Simmer the sauce for about 5 minutes, allowing the flavors to meld.
  • Season the sauce with salt and pepper.
  • Add tilapia fillets to the sauce, cooking until the fish is tender and cooked through, about 4-6 minutes.
  • Serve over rice or alongside crusty bread to soak up the sauce.

Notes

Keep tilapia moist by not overcooking. Make-ahead: prep the sauce up to 3 days in advance and reheat gently before adding fish. Store in an airtight container for up to 3 days or freeze the sauce (not the fish) for up to 3 months. Reheat on low heat with broth.
