Fruits

  • 1 cup Fresh fruit (strawberries, mango, kiwi, bananas) Choose a mix for color and sweetness.

Other Additions

  • 0.5 cup Sweet rice or cooked quinoa For sweet sushi style.
  • 0.25 cup Toasted coconut, sprinkles, or crushed nuts For crunch and visual appeal.
  • 2 tbsp Honey or maple syrup Agave for a vegan option.
  • 1 tbsp Citrus zest (lime or lemon) For flavor enhancement.

Preparation

  • Prep the bases by making crepes or laying out tortillas, rinsing fruit, and toasting coconut.

Assembly

  • Spread a thin layer of cream cheese or nut butter on the base, add a strip of fruit, and roll tight.
  • If using rice, press sticky rice thin, add filling, and roll like sushi.

Chill

  • Chill the rolls briefly to help slicing, though it's not required.

Garnishing

  • Sprinkle coconut, drizzle syrup, and add zest to finish.

Notes

For make-ahead, assemble the centers and keep them chilled for up to 24 hours; roll just before serving for best texture. Store in an airtight container in the fridge for up to 2 days. Serve with fizzy fruit punch or a bowl of lime-sweet dip.
