  • 4 pieces chicken breasts
  • 1 cup Romano cheese, grated
  • 1 cup breadcrumbs
  • 2 pieces eggs
  • 1 pieces lemon, juiced
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a shallow bowl, beat the eggs and mix in the lemon juice.
  • In another bowl, combine the grated Romano cheese, breadcrumbs, salt, and pepper.
  • Dip each chicken breast in the egg mixture, then coat it with the cheese and breadcrumb mixture.

Cooking

  • Heat the olive oil in a large oven-safe skillet over medium heat.
  • Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through.
  • Remove from the oven and let it rest for a few minutes.

Serving

  • Garnish with chopped parsley and serve with a fresh salad or veggies.

Notes

Pound breasts to even thickness for even cooking. Pat chicken dry before dipping for better coating adhesion. Season lightly for enhanced flavor. Avoid overcrowding the skillet while searing. Use a meat thermometer to check that chicken is done at 165°F (74°C). Allow chicken to rest before serving for juicier meat.
