Ingredients
  

For the Marinade

  • 1/2 cup fresh lime juice
  • 1/2 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 units zest of lime
  • 1 units zest of orange

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • fresh cilantro for garnish optional

Instructions
 

Preparation

  • In a medium bowl, combine lime juice, orange juice, lemon juice, soy sauce, olive oil, honey, minced garlic, ground cumin, ground coriander, salt, black pepper, and the zest from the lime and orange. Whisk together until well combined.
  • Place chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish and let it marinate in the fridge for at least 2 hours, or overnight for the best flavor.

Cooking

  • Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.
  • Remove the chicken from the marinade and discard any excess marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  • Let the chicken rest for about 5 minutes before serving. Garnish with fresh cilantro.

Notes

For meal prep, marinate the chicken the night before. Store any leftovers in an airtight container in the fridge for up to 3 days. You can also freeze marinated chicken for up to 3 months.
