Pizza Base

  • 1 round pizza dough Use store-bought or homemade.
  • 1 tablespoon olive oil For brushing on the dough.

Toppings

  • 1 head roasted garlic Roast ahead or use jarred for convenience.
  • 2 cups fresh spinach Pat dry if using pre-washed.
  • 1 cup ricotta cheese Can use part-skim for lighter version.
  • 1/2 cup feta cheese Use block feta for best texture.
  • 1 cup mozzarella cheese Cubed or shredded.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes Optional, for extra heat.

Instructions
 

Preparation

  • Preheat the oven to 475°F (245°C).
  • Roll out the pizza dough on a floured surface.
  • Brush the dough with olive oil and spread the roasted garlic over it.
  • Evenly distribute the fresh spinach over the garlic.
  • In a bowl, mix the ricotta, feta, and mozzarella cheeses together, then spread this cheese mixture over the spinach.
  • Season with salt, pepper, and optional red pepper flakes.

Cooking

  • Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
  • Remove from the oven, let it cool slightly, then slice and serve.

Notes

For best texture, reheat leftovers in a hot oven or cast iron skillet. You can also batch cook by freezing uncooked or cooked slices.
