  • 2 slices slices of bread Use your favorite, sourdough is fab!
  • 1/2 cup ricotta cheese Creamy and packed with protein.
  • 1/4 cup sun-dried tomatoes, chopped Adds a flavorful zing.
  • 1 cup fresh spinach, chopped Feel veggie-licious!
  • 1 tablespoon olive oil or butter Your choice!
  • Salt and pepper to taste Flavor boost!
  • Optional: cheese slices Mozzarella or cheddar work perfectly.

Instructions
 

Preparation

  • In a bowl, mix together ricotta cheese, sun-dried tomatoes, spinach, salt, and pepper.
  • Heat olive oil or butter in a skillet over medium heat.
  • Spread the ricotta mixture on one slice of bread. Optionally, layer on cheese slices before topping with the second slice of bread.

Cooking

  • Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes on each side.
  • Remove from skillet, slice, and enjoy!

Notes

For meal prep, the ricotta mixture can be made ahead and stored in an airtight container in the fridge for up to 2 days. Leftovers can be reheated in a skillet for optimal texture. Fun shapes can be created with cookie cutters for kids!
