Ingredients
  

For the skewers

  • 2 medium zucchinis, sliced Can substitute with squash or other vegetables.
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter For vegan option, use vegan butter.
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice Drizzle on before serving.

Preparation

  • Wash the zucchinis and slice them into thick rounds or half-moons.
  • In a small saucepan over low heat, melt the unsalted butter.
  • Add the minced garlic to the melted butter and simmer until fragrant.
  • In a large bowl, combine the zucchini slices with olive oil, salt, pepper, and the garlic butter until each piece is coated.
  • Thread the zucchini pieces onto skewers, soaking wooden skewers in water beforehand to prevent burning.

Grilling

  • Preheat the grill to medium-high (around 400°F).
  • Grill the skewers for about 8-10 minutes, turning occasionally, until golden char appears.
  • Drizzle fresh lemon juice over the skewers before serving hot.

Notes

These skewers can be made ahead of time and stored in the fridge. They are perfect for barbecues or meal prepping.
