Easy Spicy Salmon Sushi Bake

Ingredients
  

For the Rice

  • 2 cups sushi rice If unavailable, use short-grain or jasmine rice.
  • 2.5 cups water For cooking the sushi rice.

For the Salmon Mixture

  • 1 lb salmon fillet, cooked and flaked Canned salmon can also be used.
  • 1/4 cup mayonnaise Use light or regular as preferred.
  • 2 tablespoons sriracha sauce Adjust for desired spiciness.
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

For Topping

  • 2 sheets nori, cut into small pieces
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Rinse the sushi rice under cold water until the water runs clear.
  • Cook the rice according to package instructions with 2 1/2 cups of water.

Combining Ingredients

  • Spread the cooked rice evenly in a baking dish.
  • In a separate bowl, mix flaked salmon, mayonnaise, sriracha, soy sauce, and sesame oil together.
  • Layer the salmon mixture over the rice evenly.
  • Sprinkle nori pieces, green onions, and sesame seeds on top.

Baking

  • Bake in the preheated oven for 15-20 minutes until heated through.
  • Let it cool for a few minutes before serving.

Notes

Make ahead by preparing the dish the day before and refrigerating. Leftovers can be stored in an airtight container for up to 3 days. This dish can be made vegan by using tofu or additional veggies.
