Ingredients
  

For the Beignets

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup whole milk Can be substituted with low-fat or plant-based milk.
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract Use pure vanilla for best results.
  • as needed cups vegetable oil for frying
  • as needed cups powdered sugar for dusting

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Lumps are okay.

Cooking

  • Heat vegetable oil in a deep pan over medium heat to about 350°F.
  • Drop spoonfuls of the batter into the hot oil.
  • Fry until golden brown, about 2-3 minutes on each side.
  • Remove from the oil and drain on paper towels.
  • Dust with powdered sugar before serving.

Notes

Keep oil temperature consistent to ensure even cooking. Store leftovers in an airtight container; reheat in the oven to restore crispness.
