Ingredients
  

Main ingredients

  • 1 cup cooked rice Use sticky or day-old rice for better texture.
  • 8 oz fresh salmon, diced Dry with paper towel before mixing.
  • 1/4 cup green onions, chopped
  • 1 ea egg
  • 1/2 cup breadcrumbs Panko breadcrumbs for extra crunch are recommended.
  • Salt and pepper to taste
  • Oil for frying Use medium heat for frying.
  • Dipping sauces of choice Soy sauce, sweet chili, or mayo work well.

Preparation

  • In a bowl, combine cooked rice, diced salmon, green onions, and egg. Mix well.
  • Season with salt and pepper.
  • Shape the mixture into small bite-sized balls.
  • Roll each ball in breadcrumbs to coat.

Cooking

  • Heat oil in a skillet over medium heat.
  • Fry the rice bites until golden brown and crispy on all sides, about 3-4 minutes.
  • Remove and place on a paper towel to drain excess oil.
  • Serve warm with your favorite dipping sauces.

Notes

Cool the bites to room temperature before storing in an airtight container. They can be kept in the fridge for up to 3 days. Reheat to maintain crispiness.
