  • 1 pound chicken tenders
  • 1 cup Greek yogurt Can substitute with unsweetened dairy-free yogurt.
  • 1 tablespoon lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano Can substitute with fresh oregano.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup whole wheat breadcrumbs Panko can be used for extra crunch.
  • Olive oil for baking A little goes a long way.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix Greek yogurt, lemon juice, garlic powder, oregano, salt, and pepper to create a marinade.
  • Add chicken tenders to the marinade and let sit for at least 30 minutes.
  • Coat each chicken tender with breadcrumbs.
  • Place tenders on a baking sheet lined with parchment paper and drizzle with olive oil.
  • Bake for 20-25 minutes, or until golden brown and cooked through.

Notes

Make ahead by marinating chicken up to 24 hours. Store in an airtight container for up to 3 days in the fridge. For longer storage, freeze cooked tenders for up to 2 months. Reheat at 350°F for 8–10 minutes.
