  • 1 cup heavy cream Can be substituted with half-and-half for lighter version.
  • 1 medium onion, diced
  • 2 cloves garlic, minced Avoid browning the garlic to prevent bitterness.
  • 2 tablespoons butter Melt in pot before adding other ingredients.
  • Salt and pepper to taste

Preparation

  • In a large pot, melt butter over medium heat. Add diced onion and minced garlic; sauté until softened.
  • Add chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
  • Stir in heavy cream and shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste.

Notes
