Main Ingredients

  • 6 large Eggs Scrambled
  • 1 lb Sausage Cooked breakfast sausage, can substitute with turkey or plant-based sausage
  • 1 cup Cheese Use cheese that melts well
  • 2 cups Hash browns Frozen or fresh
  • 10 pieces Egg roll wrappers Available in the grocery store
  • 1 cup Oil for frying For frying the egg rolls
  • to taste Salt and pepper For seasoning

Instructions
 

Preparation

  • In a skillet, cook sausage until browned (approximately 6 to 8 minutes).
  • Scramble the eggs in a separate bowl until just set, then mix with cooked sausage, cheese, hash browns, salt, and pepper.
  • Take an egg roll wrapper and place a generous amount of the filling in the center.
  • Fold the sides over the filling and roll tightly to seal.

Cooking

  • Heat oil in a pan and fry the egg rolls until golden brown and crispy, about 2 to 3 minutes per side.
  • Drain on paper towels and serve hot.

Notes

Make a little assembly line for wrapping to save time. For storage, cool completely and freeze. Reheat in a skillet or oven until crispy.
