  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese For cheesy goodness
  • 1 cup breadcrumbs For the crispy coating
  • 2 tablespoons olive oil For brushing on zucchini
  • 1 teaspoon garlic powder Adds flavor
  • to taste salt
  • to taste pepper

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Slice zucchinis into even rounds, approximately ¼ inch thick.

Mix and Coat

  • In a bowl, mix grated Parmesan, breadcrumbs, garlic powder, salt, and pepper.
  • Brush zucchini slices with olive oil and coat with the Parmesan mixture.

Baking

  • Place coated zucchini slices on a baking sheet with space in between.
  • Bake for 15-20 minutes or until golden and crispy.

Serving

  • Serve warm as a side dish.

Notes

For storage, keep in an airtight container in the fridge for up to 3 days. You can double the recipe for batch cooking. Feel free to let kids help with coating the zucchini.
