  • 4 fillets cod fillets
  • 1 can coconut milk
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a skillet, heat the olive oil over medium heat and sauté minced garlic until fragrant.
  • Add coconut milk, lemon juice, and lemon zest to the skillet. Stir and bring to a simmer.
  • Season the cod fillets with salt and pepper, and place them in a baking dish.
  • Pour the coconut lemon cream sauce over the cod fillets.
  • Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  • Garnish with fresh parsley and serve.

Notes

Store leftovers in an airtight container for up to three days. Can be paired with various veggies or rice for a complete meal.
